Zaanse Mayonaise

Zaanse mayonnaise is a specific type of mayonnaise originating from the Zaanstreek region in the Netherlands, renowned for its rich culinary heritage. This mayonnaise is characterized by its creamy texture and robust flavor profile, achieved through distinctive ingredients and production methods.

Typically, Zaanse mayonnaise is crafted using fresh eggs, vegetable oil (such as sunflower or rapeseed oil), vinegar or lemon juice, mustard, salt, and sugar. What sets Zaanse mayonnaise apart is its incorporation of a particular type of mustard known as Zaanse mustard. This mustard, hailing from the same region, boasts a unique flavor characterized by its mildly spicy and herbaceous notes.

The process of making Zaanse mayonnaise involves meticulously blending the ingredients to achieve a smooth and creamy consistency. This is usually achieved by combining the eggs and mustard and then gradually adding the oil while continuously whisking to form a stable emulsion. Vinegar or lemon juice is employed to impart the mayonnaise with its distinctive freshness and slight acidity, while salt and sugar are added to balance the flavors.

The result is a deliciously creamy and flavorful mayonnaise with a subtle spicy undertone, courtesy of the addition of Zaanse mustard. Zaanse mayonnaise is often utilized as a dip for fries, a condiment for sandwiches, a base for salad dressings and ofcourse the ideal matonnaise for the Dutch skinless sausage.
