Potato, Bacon and Sauerkraut Mash (Stamppot Zuurkool)

A traditional Dutch staple food, a mix of richly mashed spuds, sauerkraut and bacon. This dish is bursting with a rainbow of flavors: the smooth, soft and hearty potato mash mixes with the salty bacon and the slightly sour sauerkraut. And remember: although the Germans invented sauerkraut, the Dutch were the first to use this very tasteful, slightly fermented chopped cabbage in  ombination with savory mashed potatoes. We offer the ultimate companions to this dinner meal: order yours with a whole of half smoked pork sausage, 1 or 2 pork meatballs, gravy – see our order options.

Serving suggestion: put one cup of seedless raisins in a small saucepan and add half a cup of white wine. Bring to cook slowly, and then simmer for 5 minutes on low heat. Drain the now slightly larger, soaked raisins, and mix them with our Potato, Bacon and Sauerkraut Mash for the ultimate flavor-burst of savory, salty, sour and sweet!
