Dried split peas are basically the same as regular green peas that you might have served many times as a green veggie side dish for dinner. Split peas however are processed differently: they peas are shelled, dried, and then split in half along the natural seam of the pea; this splitting process is what makes them faster to cook. These often underrated beauties are packed with tons of fiber, plant-based protein, iron, zinc, and phosphorus.
Serving suggestion: of course you can make your own Pea Soup with this great ingredient, but why not try a vegan curry for a change? For 4 persons: heat a tablespoon of olive oil over medium heat in a large pan. Add 1 diced onion and cook for about 3 minutes. Add half a cup of red curry paste and stir for 2 minutes. Then add 4 cups of vegetable broth and 2 cups split peas. Bring to a boil, reduce heat, and simmer for 15 minutes, until the split peas have become tender. Add in 500g diced tomatoes and half a liter coconut milk. Continue to simmer for an additional 20 minutes, or until the mixture is very thick and the split peas are very tender. Taste and adjust seasoning with some salt and pepper if needed.
